From today's New York Times Dining Blog: OBAMA HATES BEETS! What are we going to do?
Beets are sweet and delicious, and with a totally inoffensive flavor! Maybe he's only ever had those nasty canned beets or boiled beets.
We eat a lot of beets at home because of my beet-fiend girlfriend, and it's honestly one of easiest, most delicious things to make. Trim your beets of their tails and butts, then wrap in foil with olive oil, salt, pepper, and a splash of water. Roast in a 425 degree oven until a knife goes very easily the their center. This could take from 35 minutes to an hour and a half, depending on their size. Let them cool, then peel them with a knife or by rubbing them with a towel you don't care much about. The skin will come right off.
Then, it's up to you. There's that bistro standard with goat cheese and greens, or try it with a yogurt based dressing. They're also very good warm, and pair well with beef.
